Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork
Provides the main meat flavour and fat for a juicy, tender texture.
Veal
Adds a mild, delicate meat base that softens the sausage texture.
Beef suet
Adds hard fat that melts during cooking, keeping the sausage moist and rich.
Soaked bread crumb
Absorbs moisture and fat, helping the filling bind and stay tender.

The step that matters

Hanging to smoke and dry. The sausages must dry enough to firm up and preserve, but not so long that they become hard and brittle. Even drying and smoke exposure control moisture loss and keep the texture safe and pleasant.

Swap the sage

How well each one fits the dish's main ingredients (pork, veal, beef, pepper):

  1. Sagethe original
  2. Marjoramfits about as well
  3. Thymefits about as well
  4. Parsleyfits less well

Fit is the average pairing score against pork, veal, beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
