What each ingredient does

Eggs
Bind the mixture together so it holds its shape when stuffed and cooked.
Breadcrumbs
Absorb moisture and add body, giving the forcemeat a soft, light texture.
Beef suet
Adds fat that keeps the forcemeat moist and rich as it cooks.
Ham or gammon
Contributes savoury, salty flavour to the meat mixture.

The step that matters

Pound the mixture until well combined. Thorough pounding breaks the meats and fat into fine, evenly distributed pieces, so the forcemeat cooks smoothly and binds evenly rather than crumbling or tasting patchy.
