What each ingredient does

Butter
Melts with the vegetables to add richness and a silky, smooth body.
Cabbage lettuces
Form the leafy base of the soup and add gentle body as they cook down.
Cucumbers
Contribute moisture and a mild, fresh flavour as they soften during cooking.
Spinach
Adds leafy flavour and colour and thickens the soup as it cooks down.

The step that matters

Cover and cook over very low heat for 2 hours. Very low, covered heat lets the vegetables soften and release their juices gently. Higher heat could scorch the butter and vegetables on the bottom of the pan before they break down.

Swap the onion
