Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Partridge Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Assemble

  1. Preheat the oven to 350°F (175°C).

  2. Lay the beef steak at the bottom of a pie dish.

  3. Place the partridges on top of the steak, adding a hard-boiled egg between each pair.

  4. If using, place a piece of ham on each partridge.

  5. Season the gizzards and two wing joints, placing them in the center of the pie.

  6. Add salt and pepper inside the pie.

  7. Pour in 1 cup of water.

Bake

  1. Make a hole in the crust to show the pie's contents.

  2. Bake for 1 hour.

What each ingredient does

Beef steak
Forms the base layer and adds meaty flavor as the pie cooks.
Partridges
Provide the main meat, cooking through in the enclosed pie.
Hard-boiled egg
Adds richness and a firm, sliceable texture between the layers.
Ham
Adds salty, savory flavor over the partridges.
Butter
Adds fat for richness and helps the crust brown.
