What each ingredient does

Honey
Provides the fermentable sugars that yeast later turns into alcohol, and most of the mead's sweetness and body.
Water
Dissolves the honey and forms the bulk of the liquid in which the mead is made.

The step that matters

Boiling the honey and water together. Honey dissolves fully in hot water, and a steady boil with stirring keeps it from scorching on the bottom of the pot. Scorched honey takes on burnt flavours that carry into the finished mead.
