What each ingredient does
- Honey
- Provides the sugar that yeast ferments into alcohol, and the body of the mead.
- Yeast
- Converts the sugars into alcohol and carbon dioxide during fermentation.
- Lemons
- Add acidity that brightens the flavour and helps keep the mead clear and stable.
- Cowslip-pips
- Contribute floral aroma and flavour to the finished mead.
The step that matters
Stir in the yeast and fermentation. Yeast needs the liquid cooled to a warm, not hot, temperature before it is added; boiling-hot liquid can kill it and stall fermentation. Fermentation then needs to proceed in a clean, covered vessel so unwanted microbes do not spoil the batch.
