Beef-heart

Ingredients

Directions

  1. Wash the beef heart carefully and stuff it like a hare.

  2. Serve with rich gravy and currant jelly sauce.

  3. For the ox cheek, soak and cleanse it the day before cooking.

  4. Place the cheek in a stew pot with 3 quarts of water and bring to a boil.

  5. Skim the surface, then simmer for 2 hours.

  6. Add carrots, leeks, turnips, sweet herbs, whole pepper, and allspice.

  7. Skim often until the meat is tender, then remove the meat.

  8. Let the soup cool, then remove the layer of fat.

  9. Serve the soup separately or with the meat.

  10. To achieve a fine brown color, use burnt sugar or fry onions with flour and simmer them in the soup.
