Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton neck
Provides the meat and bones that flavour and enrich the broth as it simmers.
Carrots
Add sweetness and body to the broth as they soften during stewing.
Turnips
Contribute mild sweetness and soften into the broth during long cooking.
Onions
Release sweetness and savoury depth into the broth during stewing.
Scotch barley
Swells and thickens the broth, giving it body as it cooks.

The step that matters

Skimming the pot. Skimming removes foam and excess fat that rise as the meat cooks. Doing it regularly keeps the broth clear and less greasy, so the flavour stays clean.
