What each ingredient does

Butter
Provides fat for frying and carries flavour through the onions and chicken.
Chicken
Supplies the main protein, which browns in the fat to add savoury depth.
Curds
Add tang and body, thickening the sauce as they combine with the spices.
Onions
Brown to build sweetness and a rich base for the curry.
Coriander seeds
Contribute warm, citrusy aroma that flavours the sauce.
Sour apple
Adds acidity and softens into the sauce, balancing the richness.

The step that matters

Keep stirring to prevent burning. Onions, curds and spices contain sugars and proteins that scorch on hot metal, so constant stirring keeps the sauce from catching and turning bitter.
