Pilchard and Leek Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Clean and skin the white part of the leeks.

  2. Scald the leeks in a mixture of milk and water.

Assemble and bake

  1. Layer the leeks in a dish, adding two or three soaked salted pilchards between the layers.

  2. Cover the dish with a pie crust.

  3. Bake in a 400°F (200°C) oven until golden.

Finish

  1. Remove the pie from the oven and lift the side crust with a knife to empty out the liquid.

  2. Pour in ½ pint of scalded cream.

What each ingredient does

Leeks
Form the bulk of the filling and add a mild, sweet onion flavour.
Salted pilchards
Supply salty, savoury fish flavour that seasons the filling.
Cream
Adds richness and a smooth, silky texture to the filling.
Milk
Softens the leeks during scalding and adds gentle richness.

The step that matters

Emptying the liquid before adding cream. Liquid released during baking dilutes the filling; draining it before pouring in scalded cream keeps the filling rich and prevents a watery pie.
