Curds and Cream

Ingredients

Directions

Make the curd

  1. Warm the milk in a pan.

  2. Add rennet or gallino to the milk.

  3. When the curd forms, ladle it into a perforated earthen shape.

  4. Fill the shape as the whey drains off, without breaking or pressing the curd.

  5. Turn the curd after 2 hours for a lighter curd.

  6. If a firmer curd is desired, squeeze it earlier.

Serve

  1. Serve with cream, sugar, wine, and lemon in the dish or a glass bowl.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the body of the curd as its proteins set when coagulated.
Rennet or gallino
Enzymes that clot the milk into a soft curd.
Cream
Adds richness and a smooth, fatty mouthfeel to the curd.
Sugar
Adds sweetness that balances the mild, slightly sour curd.
Lemon
Adds acidity that brightens the flavour of the rich curd.

The step that matters

Fill the shape without breaking or pressing the curd. A fragile curd that is disturbed or pressed early loses whey unevenly and its protein network tears, leaving a crumbly, grainy texture instead of a smooth one.

Swap the lemon

How well each one fits the dish's main ingredients (milk, cream, sugar, wine):

  1. Vanillafits better
  2. Strawberryfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against milk, cream, sugar, wine. Candidates are from the same food group and used in at least 100 recipes.
