Why it works: Rice and cucumber match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 734 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Spanish Custards
Ingredients
Directions
Make the custard
Heat 1½ pints of thin cream in a saucepan, reserving 1 cup.
Add 6‑8 bitter almonds and ½ oz. of isinglass dissolved in boiling water.
Simmer for 45 minutes until the isinglass is fully dissolved.
Mix 1 tablespoon of ground rice into the reserved cold cream.
Pour the cold cream mixture into the hot cream, stirring continuously.
Simmer gently until the mixture thickens.
Flavor with 2 tablespoons of orange‑flower or rose water.
Strain through a coarse sieve, stirring until nearly cold.
Set and serve
Pour into cups dipped in cold water and let stand in a cool place until firm.
Turn out onto a dish, garnish with sliced blanched almonds and preserves.
Before serving, pour a little cold cream into the dish.

What each ingredient does
- Thin cream
- Provides the rich base and fat that give the custard its smooth, creamy texture.
- Isinglass
- A gelatin-like setting agent that firms the cream into a sliceable, wobbly custard as it cools.
- Ground rice
- Starch that thickens the mixture and helps give it a smooth body.
- Bitter almonds
- Adds a distinctive almond aroma and flavor to the cream.
- Orange-flower or rose water
- Adds a floral aroma that perfumes the custard.
The step that matters
Adding the cold cream and rice mixture to the hot cream. Stirring constantly while pouring prevents the starch from clumping and lumps from forming, so the custard thickens evenly and stays smooth.
