Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White meat from boiled chicken
Provides the protein base that sets into a smooth, thick paste when cooked.
Water
Moistens the pounded meat and helps it form a paste that can be thinned to the desired consistency.

The step that matters

Boil gently for a few minutes until thick. Boiling too hard or too long can toughen the proteins and make the panada grainy or overly stiff. Gentle heat lets the meat thicken smoothly to a drinkable but thick consistency.

Swap the nutmeg

How well each one fits the dish's main ingredients (chicken, meat, lemon):

  1. Thymefits better
  2. Rosemaryfits better
  3. Marjoramfits better
  4. Nutmegthe original

Fit is the average pairing score against chicken, meat, lemon. Candidates are from the same food group and used in at least 100 recipes.
