Why it works: Cream and sugar are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓

What each ingredient does
- Fresh ground coffee
- Provides the main flavour and aroma of the drink.
- Isinglass
- Acts as a fining agent that helps settle fine grounds so the coffee clears.
The step that matters
Returning the poured-out coffee to the pot. Pouring the coffee back and forth mixes the grounds through the liquid, which helps extraction. Keeping the brew hot afterward lets the grounds settle, so the coffee is clearer when poured.
