Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Form the bulk of the paste, giving the macaroons their body and nutty flavor.
Egg whites
Whisked to a foam, they add structure and lightness to the paste and help it set.
Sugar
Sweetens the mixture and helps bind the paste into a smooth, workable texture.

The step that matters

Whisk the egg whites to a froth. Egg whites hold air when whisked into a stable foam. Underwhipped whites give a dense, flat cake, while overwhipped whites turn grainy and collapse when folded into the paste.

Swap the orange

How well each one fits the dish's main ingredients (almond, flour, egg, sugar):

  1. Raisinfits better
  2. Vanillafits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against almond, flour, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
