Veal Pie

Ingredients

Directions

  1. Cut slices from the knuckle of veal and season with plenty of coarse sea salt.

  2. Scald the parsley, squeeze it dry, and chop it coarsely.

  3. Layer the bottom of a dish with parsley, then add a layer of veal and fat, followed by thick slices of hard-boiled eggs.

  4. Repeat the layers, finishing with parsley on top.

  5. Pour milk into the dish, ensuring it does not touch the crust.

  6. Cover with pie crust and bake until golden brown.
