A Richer Veal Pie

Ingredients

Directions

  1. Cut steaks from the neck or breast of veal and season with pepper, coarse sea salt, nutmeg, and ground cloves.

  2. Crush the bones very small and remove the shank bones.

  3. Add small forcemeat balls and slices of hard-boiled eggs.

  4. Lay pastry around the edge of the dish, then fill with the meat, eggs, forcemeat balls, and thin slices of ham or bacon.

  5. Cover the top with pastry and lay a paper over it to prevent burning.

  6. Brush the top with egg using a feather.
