Black Puddings

Ingredients

Directions

  1. Mix the milk with the other ingredients until it reaches the consistency of rice pudding.

  2. Strain the blood into the mixture until it reaches your desired darkness.

  3. Add the pork fat and fill the sausage skins halfway, allowing them to swell.

  4. Make each link a few inches long and prick the skins with a fork to prevent bursting.

  5. Boil the links for one hour.

  6. Remove the black puddings from the pot and lay them on clean straw.
