Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pigeons

  1. Rub the cleaned pigeons with pepper and salt, inside and out.

  2. Stuff each pigeon with butter, parsley, and the chopped liver.

Assemble the pie

  1. Place the beef steak at the bottom of a pie dish and lay the pigeons on top.

  2. Slice a hard-boiled egg between every two pigeons.

  3. Add water to the dish and place a slice of ham on each pigeon.

  4. Season and chop the gizzards, then distribute them over the pie.

  5. Roll out the puff pastry and cover the dish, sealing the edges.

Bake

  1. Brush the top with egg yolk and place three pigeons' feet in the center.

  2. Bake in a moderate oven at 350°F (175°C) for one hour.

What each ingredient does

Pigeons
The main meat, which becomes tender during the long, slow bake.
Beef steak
Sits beneath the birds, adding meaty flavor and moisture to the pie.
Hard-boiled eggs
Add richness and a firm, sliced texture between the birds.
Ham
Adds salty, savory flavor that seasons the birds as they cook.
Puff pastry
Forms a flaky, crisp crust that encloses the filling.
Egg yolk
Brushed on top to promote a golden browning of the crust.

The step that matters

Sealing the pastry edges. A fully sealed crust keeps steam and juices inside, so the birds cook in their own moisture rather than drying out. Any gap lets steam escape and leaves the filling dry.
