What each ingredient does

Hard-boiled eggs
Form the hollow shells that hold the filling and give the dish its structure.
Veal
Adds savory meaty body to the filling, making it firm enough to hold its shape.
Ham
Adds salty, savory flavor to the filling alongside the veal.
Bread crumbs
Absorb moisture and help bind the filling so it holds together when fried.
Butter
Adds richness and fat, giving the filling a softer, smoother texture.
Egg yolk
Coats the outside of the filled eggs so they brown evenly when fried.

The step that matters

Frying the filled eggs until light brown. The coating of egg yolk browns in hot fat, and the fat must be hot enough to brown the surface quickly. Frying too long or too hot can darken the coating and dry out or overheat the filling inside.
