Directions

Prepare

  1. Chop the raisins and place them in a tub.

  2. Pour warm spring water over the raisins, measuring the quantity as you pour.

Ferment

  1. Let the mixture stand in a cool place for two weeks, stirring well three to four times each day with a mashing staff.

  2. Strain the mixture, pressing the fruit dry, and pour the liquid into a wine cask.

  3. After fermentation is complete, seal the cask for four months.

Rack and store

  1. Rack the wine, filter the dregs through a flannel bag, and return it to the barrel.

  2. Store the wine for one year.

What each ingredient does

Raisins
Provide the sugar and fruit flavour that fermentation turns into alcohol.
Spring water
Dissolves the raisin sugars and forms the liquid base in which fermentation takes place.
