Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Scalloped Oysters

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the oysters

  1. Stew the oysters slowly in their own liquor for 2–3 minutes.

  2. Remove the oysters with a spoon. Discard the gills.

  3. Skim the liquor.

Make the crumb base

  1. Melt the butter in a stew pan.

  2. Add enough bread crumbs to absorb the butter.

  3. Pour in the oyster liquor. Bring the mixture to a boil.

Assemble and brown

  1. Butter the scallop shells.

  2. Layer the shells with oysters and bread crumbs, alternating layers. Moisten the layers with oyster liquor.

  3. Top the layers with more bread crumbs. Dot the top with small pieces of butter.

  4. Brown the dish in a Dutch oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and tender, briny body of the dish.
Butter
Adds richness and carries flavor, and helps the crumbs brown as they bake.
Bread crumbs
Absorb the butter and oyster liquor, soaking up moisture to form soft layers.

The step that matters

Brown the dish in a Dutch oven. Oysters overcook quickly and turn rubbery when heated too long. Browning should be done just until the crumbs turn golden, so the oysters stay tender.
