Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton scrag
Gives the broth its meaty flavour and body as it simmers.
Grits
Thickens the broth slightly as the starch releases during simmering.
Turnips
Add mild sweetness and aromatic depth to the simmering broth.

The step that matters

Remove the scum as it forms. Scum is coagulated protein and impurities rising from the meat. Skimming it keeps the broth clear and prevents off-flavours from dispersing back into the liquid.

Swap the turnip

How well each one fits the dish's main ingredients (mutton, onion):

  1. Leekfits better
  2. Potatofits better
  3. Turnipthe original
  4. Chivefits about as well

Fit is the average pairing score against mutton, onion. Candidates are from the same food group and used in at least 100 recipes.
