What each ingredient does

Lamb's head and lights
Provides the meat and rich flavor that the broth is built around.
Beef stock
Forms the liquid base that carries flavor and keeps the stew moist.
Shin of beef
Its connective tissue breaks down during slow cooking, giving the broth body.
Spinach
Adds a tender, leafy texture and fresh green color to the stew.
Onions
Softens during simmering and adds gentle sweetness and aroma to the broth.

The step that matters

Adding the spinach 20 minutes before serving. Spinach cooks in minutes. Adding it late keeps it tender and bright green instead of dull and overcooked.
