Ingredients

Directions

  1. In a stew pan, combine the bread crumbs and enough milk to soak them, plus a little extra.

  2. If using, stew the giblets, head, neck, and legs of the poultry, then moisten the bread with this liquid.

  3. Add the mixture to the fire with the onion and pepper or allspice.

  4. Bring to a boil, then stir well and let it simmer until thick.

  5. Remove the onion and pepper, then stir in the cream or melted butter before serving.

What each ingredient does

Bread crumbs
Soak up milk and swell into a thick, starchy base that gives the sauce body.
Milk
Softens the crumbs and forms the liquid that turns into the sauce.
Cream or melted butter
Adds richness and a smooth, silky mouthfeel at the end.
Onion
Infuses the sauce with a mild savory aroma during simmering.

The step that matters

Simmer until thick. Bread thickens as its starch absorbs liquid and swells. Simmering gently while stirring keeps the starch from settling and scorching on the bottom of the pan, giving a smooth, even sauce.

Swap the onion

How well each one fits the dish's main ingredients (bread, milk, pepper, cream):
