Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gravy
Forms the liquid base of the sauce and carries the other flavours.
Butter
Adds fat and richness, giving the sauce a smooth, glossy mouthfeel.
Flour
Thickens the sauce as it simmers, giving it body.
Mushroom or walnut ketchup
Adds concentrated savoury depth and umami to the sauce.
Lemon juice
Adds acidity that brightens the rich gravy and butter.

The step that matters

Simmering until thickened. Flour needs to simmer for a few minutes to cook out its raw starchy taste and reach full thickening power. Stopping early leaves the sauce pasty, while boiling hard or too long can make it gluey and reduce it too far.

Swap the lemon

Fit is the average pairing score against butter, flour, mushroom, mustard, capers, pepper, shallot. Candidates are from the same food group and used in at least 100 recipes.
