What each ingredient does

Flour
Thickens the sauce as it cooks with the butter and liquids.
Red wine
Adds acidity and deep flavor to the sauce.
Butter
Carries the aromatics and adds richness to the sauce.
Shallots
Add a mild, sweet aromatic depth as they cook down.

The step that matters

Cooking the vegetables until they start to color. Browning the onion, carrot, turnip and shallots builds deeper, richer flavor through the Maillard reaction. Stirring often keeps them from scorching and turning bitter.
