Hashed or Minced Veal

Ingredients

Directions

  1. Cut the veal into slices and mince it as fine as possible without chopping.

  2. Place the minced veal in a stew pan with a few spoons of veal or mutton broth.

  3. Add minced lemon peel, milk or cream, and thicken with butter and flour.

  4. Season with coarse sea salt, lemon pickle or basil wine, and curry powder.

  5. If you don't have cream, beat the yolks of two eggs with a little milk.

  6. Line a dish with sippets of lightly toasted bread.

  7. Transfer the mixture into the dish, sprinkle with breadcrumbs and a little butter.

  8. Brown in a Dutch oven or cheese toaster.
