Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold chicken, fowl, or turkey
Provides the meat that is pulled apart and simmered until tender and warm.
Broth
Adds moisture and savoury flavour, keeping the pulled meat from drying out.
Flour
Thickens the broth into a body that clings to the pulled meat.
Butter
Enriches the thickened sauce with fat, adding richness and smoothness.
Lemon
Its juice and peel add acidity and bright aroma to the broth.

The step that matters

Thicken the mixture with flour and butter, and simmer for 2-3 minutes until the meat is warm.. Cooking flour in fat and liquid gelatinises the starch, so the sauce thickens smoothly. Simmering only briefly keeps the meat warm and tender without toughening it.

Swap the mace

How well each one fits the dish's main ingredients (chicken, lemon, pepper, flour, butter):

  1. Parsleyfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against chicken, lemon, pepper, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
