Spring Crea M, or Mock Gooseberry Fool

Ingredients

• 1 pint good thick cream
• 2 ounces isinglass
• water

Directions

1. Prepare a marmalade as directed for the pudding.

2. Add the cream to the marmalade and mix well.

3. If desired in a shape, dissolve the isinglass in a little water.

4. Strain the dissolved isinglass through a fine sieve.

5. When nearly cold, mix the isinglass with the cream mixture.

6. Pour the mixture into a jelly mold and refrigerate until set.

7. Once set, turn out onto a dish and serve plain.
