Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl barley
Swells as it simmers, thickening the broth and giving it a chewy texture.
Beef or mutton
Releases flavor and gelatin into the broth, adding richness and body.
Carrots
Add natural sweetness and color as they soften in the broth.
Turnips
Add mild sweetness and soft texture as they cook through.

The step that matters

Skimming off the fat during the long boil. Fat rises to the surface and, if left in, makes the broth greasy and cloudy. Skimming it as it forms keeps the broth clear and lighter-tasting.

Swap the carrot
