Ingredients

Directions

  1. Prepare brioche paste and shape it in a mold or with a piece of bread to maintain the shape.

  2. In a saucepan, combine chopped chicken, sweetbreads, and cock's combs with thick white sauce and cook until tender.

  3. Form small balls or bean-shaped pieces from the remaining brioche paste.

  4. Boil the paste pieces in the gravy until cooked through.

  5. Arrange the cooked mixture in the brioche shell and top with the boiled paste pieces and baked leaves and flowers from the crust.
