Directions

Prepare the isinglass

  1. Soak the isinglass in a basin with boiling water just to cover it and let it stand overnight.

Make and set the blancmange

  1. Add the cream, orange-flower water, and sugar to the soaked isinglass.

  2. Boil the mixture until the isinglass is dissolved.

  3. Strain through a fine sieve and pour into scalded, cold water-dipped moulds.

What each ingredient does

Isinglass
Fish-derived gelatin that sets the liquid into a firm, sliceable jelly as it cools.
Cream
Adds fat and richness, giving the set dessert a smooth, soft mouthfeel.
Orange-flower water
Provides a floral aroma that flavours the dessert in small amounts.
Sugar
Sweetens the mixture to taste.

The step that matters

Boil until the isinglass is fully dissolved. Isinglass must dissolve completely in hot liquid to set evenly. Undissolved pieces leave weak, grainy patches, and the set depends on the gelatin being fully dispersed before cooling.

How well each one fits the dish's main ingredients (cream, sugar):

  2. Strawberrybetter flavor fit
  3. Raspberrybetter flavor fit
  4. Orangethe original

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
