What each ingredient does

Carp
Is the main fish that is cooked gently in the simmering liquid until tender.
Egg yolks
Thicken the sauce into a smooth, creamy texture when gently heated.
Butter
Adds richness and body to the sauce, helping it feel smooth on the palate.
Anchovies
Add savoury depth to the sauce, which melts into it during cooking.
Lemon juice
Adds acidity that brightens the rich cream and butter sauce.

The step that matters

Adding egg yolks to the sauce. Egg yolks thicken through gentle heat. If the sauce boils after they go in, they can scramble and turn grainy, so keep it warm and stir constantly.

Swap the mace

How well each one fits the dish's main ingredients (white wine, pepper, onion, horseradish, butter, flour, lemon):

  1. Parsleyfits better
  2. Thymefits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against white wine, pepper, onion, horseradish, butter, flour, lemon. Candidates are from the same food group and used in at least 100 recipes.
