Blackberry Wine
Ingredients
Directions
Prepare the mash
Place the blackberries in a large wooden or stone vessel with a spout.
Pour boiling water over the berries until they are covered.
Once cool enough, crush the berries until broken.
Cover and let sit until the berries rise to the top, about 3-4 days.
Ferment and strain
Strain the liquid into another vessel and add 1 pound of sugar for every 10 quarts of liquid.
Stir well and let it ferment in a similar vessel for 7-10 days.
Strain again through a jelly bag into a large vessel.

What each ingredient does
- Blackberries
- Provide the fruit flavour, natural sugars for fermentation, and the colour of the wine.
