Beef Olives

Ingredients

Directions

  1. Cut the beef into strips about ½ inch thick and 10 inches long.

  2. Cut the bacon to match the width of the beef and about 3 inches long.

  3. Spread part of the egg yolk on the beef, place the bacon on top, and add another egg yolk on the bacon.

  4. Spread forcemeat on top, add more egg yolk, roll them up, and tie securely with string in two places.

  5. Coat with bread crumbs and another egg yolk.

  6. Fry in a large pan with beef dripping until browned, then drain.

  7. In a saucepan, melt butter, stir in flour until smooth, then add gravy and white wine.

  8. Add the olives and simmer for an hour.

  9. Incorporate mushrooms, truffles, morels, forcemeat balls, and sweetbreads.

  10. Squeeze in lemon juice and season with pepper and salt.

  11. Carefully skim off fat, place in a dish, and garnish with lemon and beetroot.
