  1. Parboil the sweetbreads and let them cool.

  2. Lard them with bacon and roast in a Dutch oven or on a poor man’s jack.

  3. For sauce, mix butter with ketchup or lemon juice.

  4. Cut the sweetbreads into long dices.

  5. Beat the yolk of an egg and rub it over the sweetbreads.

  6. Mix pepper, salt, and grated bread for seasoning.

  7. Dip the sweetbreads into the seasoning and fry in butter.

  8. Garnish with small slices of toasted bacon.
