Greengages in Brandy
Ingredients
Directions
Gather unripe greengages and place them in a pan with vine leaves between each row and at the bottom.
Fill the pan with water and heat over a low fire until the plums can be peeled.
Peel the greengages carefully and return them to the same water with more vine leaves.
Cover the pan tightly and let it sit away from the fire to steep.
Drain the plums and pour a good syrup over them.
The next day, boil the syrup, add the plums, and bring to a boil.
Repeat this process twice a day until the plums look clear.
If necessary, boil the syrup again or transfer the plums to fresh syrup when cold.
