Why it works: Flour and sugar are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Yeast Bread

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Make the sponge

  1. Soak the yeast cake in a little tepid water in the evening.

  2. Boil the potatoes in 1 quart of water until soft.

  3. Mash the potatoes.

  4. Return the mashed potatoes to the cooking water.

  5. When lukewarm, add the yeast and enough flour to make a stiff batter.

  6. In the morning, transfer the sponge to a bowl of warm flour.

  7. Rinse the sponge vessel with ½ cup of warm water.

  8. Add the rinsed water to the sponge.

Make the dough

  1. Mix in ½ cup of sugar, 1 tablespoon of salt, and 1 heaping tablespoon of lard.

  2. Work in flour until the dough is stiff; no need to knead longer.

  3. Place the dough in a greased vessel.

  4. Grease the top of the dough to prevent crust formation.

Shape and bake

  1. Once the dough has risen, form it into loaves with minimal kneading.

  2. Place the loaves in pans.

  3. Let the loaves rise.

  4. Bake the loaves in a moderate oven (350°F or 175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Yeast cake
Ferments the sponge, producing gas that makes the dough rise.
Potatoes
Their starch and moisture keep the dough soft and moist.
Flour
Forms the gluten structure that traps gas and gives the loaves their shape.
Sugar
Feeds the yeast and adds sweetness and browning in the crust.
Lard
Adds fat that tenderizes the crumb.

The step that matters

Greasing the top of the dough. Without a coating of fat, the exposed surface dries and forms a tough skin that can stiffen the crust as the dough rises, so the top should be greased before rising.

Swap the potato

How well each one fits the dish's main ingredients (flour, sugar):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
