Why it works: Flour and sugar are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Yeast Bread

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the sponge

  1. Slice, cook, and mash the potatoes.

  2. Mix the mashed potatoes with the scalded flour and place in a warm spot until evening.

  3. Add the soaked yeast and set aside until morning.

Mix and rise

  1. Stir in the lukewarm water, salt, sugar, lard, and enough flour to make a stiff batter.

  2. Beat well and let rise until light.

  3. Add more flour, knead, and let rise again.

Shape and bake

  1. Shape into loaves, let rise, and bake in a moderate oven at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Add starch and moisture that help the bread stay soft and hold its texture.
Yeast
Ferments the sugars and produces gas that makes the dough rise and become light.
Flour
Forms gluten with the water, giving the dough structure to trap gas as it rises.
Sugar
Feeds the yeast and helps the crust brown during baking.
Lard
Adds fat that tenderizes the crumb and softens the texture.

The step that matters

Let the batter rise until light. Yeast needs time and warmth to produce enough gas to lighten the dough. Rising too briefly leaves a dense loaf, while the gluten network needs room to stretch and hold that gas.

Swap the potato

How well each one fits the dish's main ingredients (flour, sugar):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
