Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the sour acidity and main citrus flavour of the ice.
Sugar
Adds sweetness and softens the ice, making it less hard when frozen.
Oranges
Add sweetness and a rounder citrus aroma from their juice and rind.

The step that matters

Let the syrup cool before adding the juice. Heat dulls the fresh aroma and bright flavour of citrus juice, so the syrup should be fully cooled before the juice goes in.
