Add the vegetables and seasoning

  1. One hour before serving, add onions, potatoes, cabbage, pearl barley, tomato, and turnip.

Make and cook the dumplings

What each ingredient does

Beef
Provides the main flavour and body of the broth as it simmers.
Potatoes
Thicken the soup slightly as they break down and add starchy body.
Flour
Forms the structure of the dumplings, which set into soft, dense pieces in the broth.
Baking powder
Releases gas in the dumpling dough so the dumplings rise and lighten.
Pearl barley
Releases starch as it simmers, adding thickness and a chewy texture.

The step that matters

Remove all scum as soon as it reaches boiling point. Scum is coagulated protein and impurities that rise at first boil. Skimming it early keeps the broth clear and free of bitter, greasy off-flavours.

Swap the tomato
