What each ingredient does

Cabbage
Bulk of the dish; it softens and turns tender as it simmers in its own moisture.
Butter
Adds richness and a silky mouthfeel to the cooked cabbage.
Vinegar
Adds a bright acidity that balances the sweetness of the cooked cabbage.

The step that matters

Adding the vinegar at the end. Acid added early can slow softening and dull the color of cabbage, while adding it just before serving keeps the flavor bright and the texture tender.

Swap the cabbage

How well each one fits the dish's main ingredients (pepper, butter, vinegar):

  1. Capsicumfits better
  2. Mustardfits better
  3. Cabbagethe original
  4. Onionfits about as well

Fit is the average pairing score against pepper, butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
