Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Soak the beans overnight or parboil them.

Layer and bake

  1. In a baking crock, place the onion and mustard at the bottom.

  2. Add a layer of beans, followed by fresh pork and seasoning.

  3. Repeat with another layer of beans and top with slices of pork.

  4. Cover well with hot water and bake at 300°F (150°C) for 6 to 8 hours.

  5. Ensure the beans remain covered with water until tender.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Marrow-fat beans
Form the bulk of the dish and become tender and creamy during the long bake.
Molasses
Adds sweetness, dark color and a rich flavor to the beans.
Fresh pork
Adds savory flavor and fat that enriches the beans as they cook.
Mustard
Adds sharp, pungent flavor that balances the sweetness of the dish.

The step that matters

Keep the beans covered with water. Beans that are exposed to air during a long bake dry out and toughen on top. Keeping them submerged lets them soften evenly as they cook through.

Swap the onion

How well each one fits the dish's main ingredients (beans, pork, mustard, molasses, pepper):

  1. Lettucefits better
  2. Capsicumfits better
  3. Broccolifits better
  4. Onionthe original

Fit is the average pairing score against beans, pork, mustard, molasses, pepper. Candidates are from the same food group and used in at least 100 recipes.
