Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Wipe the turkey inside and out with a dry towel.

  3. If the turkey is tough, steam it for 1–2 hours before roasting.

  4. For stuffing, mix crumbled cracker or bread, chopped salt pork, sage, savory, and pepper. Add the egg to the stuffing mixture to help it hold together.

  5. Moisten stale bread with scalding water. Add butter, salt, pepper, and optional herbs to the bread.

Stuff and roast

  1. Stuff the turkey.

  2. Sew the turkey closed, securing wings and legs with skewers or string.

  3. Place the turkey in a roasting pan without water.

  4. Roast the turkey for 2.5 to 3 hours, starting very slowly.

  5. Baste occasionally with seasoned water to prevent scorching.

  6. Bake until uniformly light brown, avoiding burning.

What each ingredient does

Turkey
Is the main cooking mass; long slow roasting keeps the meat tender and evenly cooked.
Egg
Binds the stuffing so it holds together rather than falling apart when scooped.
Salt pork
Adds fat and savory flavor that melts into the stuffing and bread during roasting.
Stale bread
Forms the body of the stuffing; moistened bread absorbs liquid and stays soft and cohesive.
Butter
Adds fat for richness and helps the stuffing brown and taste rounded.

The step that matters

Starting the roast very slowly. Low, gentle heat cooks the large bird through without drying the outer meat or toughening the proteins, so the interior and exterior finish together.

Swap the marjoram

The recipe marks marjoram as optional. How well each one fits the dish's main ingredients (turkey, bread, pork, sage, pepper, egg, butter):

  1. Thymefits about as well
  2. Marjoramthe original
  3. Parsleyfits about as well
  4. Nutmegfits less well

Fit is the average pairing score against turkey, bread, pork, sage, pepper, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
