Baked Fish

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Rub the fish with coarse sea salt, butter, black pepper, and a little flour.

  2. Split the fish open and stuff it with seasoned bread crumbs.

  3. Place narrow strips of fat salt pork in the bottom of a baking pan.

  4. Put the fish on top of the pork and bake in a 400°F (200°C) oven without water.

  5. Baste the fish frequently while it bakes.
