Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix bread crumbs, salt, pepper, butter, parsley, and egg yolks.

  3. Stuff the shad with the mixture and sew it up or tie it with string.

Bake

  1. Place the stuffed shad in a baking dish, pour water and some butter over it.

  2. Bake for 1 to 1¼ hours, until cooked through.

Make the dressing and serve

  1. For the dressing, boil the gravy from the baking dish.

  2. Stir in catsup, brown flour mixed with cold water, and lemon juice.

  3. Serve the dressing in a sauceboat alongside the shad.

  4. Garnish with lemon slices and watercress.

What each ingredient does

Egg yolks
Bind the stuffing and set firmly during baking, holding the crumbs together.
Bread crumbs
Absorb butter and juices to give the stuffing body and moisture.
Butter
Adds fat and richness, carrying flavour and helping the fish brown and stay moist.
Brown flour
Thickens the pan gravy into a dressing with a smooth, cohesive body.
Lemon juice
Adds acidity that brightens the rich butter and gravy.

The step that matters

Bake until cooked through, not longer. Shad is a delicate, bony fish that dries out quickly. Overbaking toughens the flesh and drives out moisture, while the egg yolk stuffing must reach a set, cooked state so it is safe and holds together.
