Oysters on Toast

Oven, in the book's wordsA very hot oven

Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Toast and butter the bread.

  2. Wipe the oysters to remove any grit and lay them on the slices of bread.

  3. Season the oysters with coarse sea salt, black pepper, and a bit of butter.

  4. Place in a very hot oven at 400°F (200°C) until the edges of the oysters curl.

  5. Prepare a rich cream sauce and pour it over the oysters before serving hot.
