To Stuff and Bake Eggplant

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil the eggplant for 30 minutes.

  2. Cut it in half and scoop out the fleshy part.

  3. Chop the flesh finely and mix it with the bread crumbs, butter, salt, and pepper.

  4. Replace the mixture back into the eggplant shell.

Bake and serve

  1. Bake the stuffed eggplant at 350°F (175°C) for 45 minutes.

  2. Serve plain or with brown gravy.

  3. Optionally top with grated cheese or add cold chopped meat.

What each ingredient does

Eggplant

Bread crumbs
Absorb moisture and bind the chopped flesh into a spoonable stuffing.
Butter
