What each ingredient does

Gelatin
Sets the tomato liquid into a firm jelly that holds the cup shape when unmolded.
Tomatoes
Provide the main flavour and liquid base of the jelly, giving it acidity and colour.
Mayonnaise
Adds fat and creaminess that contrasts with the tart jelly and crisp vegetables.
Celery
Adds crisp texture and a fresh, mildly savoury crunch to the filling.
Pecan meats
Add crunchy texture and a rich, nutty flavour to the filling.

The step that matters

Dissolve the gelatin in the boiling tomato mixture. Gelatin must fully dissolve in hot liquid to set evenly; undissolved granules leave soft spots or grainy patches in the jelly. Cooling the mixture before molding lets it set firmly.

Flavor stand-ins for the lettuce

How well each one fits the dish's main ingredients (gelatin, tomato, celery, meat):

  1. Carrotbetter flavor fit
  2. Capsicumabout as good a flavor fit
  3. Lettucethe original
  4. Potatoabout as good a flavor fit

Fit is the average pairing score against gelatin, tomato, celery, meat. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
